Stir-Fried Vermicelli with Cha-Om, Shrimp & Omelette

A family signature — crispy cha-om, fresh shrimp, fluffy omelette stir-fried with tender vermicelli.
Ingredients
- Khlong Khlung vermicelli 100 g (soak 5 minutes)
- Fresh shrimp 200 g (peeled and deveined)
- Cha-om (Acacia pennata) 1 handful, young tips picked
- 2 chicken eggs
- Minced garlic 2 tsp
- Minced bird's eye chilli 1 tsp
- Oyster sauce / soy sauce / sugar / fish sauce (to taste)
Method
- 1 Soak vermicelli in clean water for 5–7 minutes until soft, then drain.
- 2 Heat oil in a wok, fry the garlic and chilli until fragrant.
- 3 Add the shrimp and stir-fry until cooked.
- 4 Pour in the eggs and stir to spread.
- 5 Add vermicelli and cha-om, toss together, season to taste.
- 6 Plate up, garnish with sliced red chilli, serve immediately.
