Stir-Fried Vermicelli with Cha-Om, Shrimp & Omelette

20 minutes 2–3 servings

A family signature — crispy cha-om, fresh shrimp, fluffy omelette stir-fried with tender vermicelli.

Ingredients

  • Khlong Khlung vermicelli 100 g (soak 5 minutes)
  • Fresh shrimp 200 g (peeled and deveined)
  • Cha-om (Acacia pennata) 1 handful, young tips picked
  • 2 chicken eggs
  • Minced garlic 2 tsp
  • Minced bird's eye chilli 1 tsp
  • Oyster sauce / soy sauce / sugar / fish sauce (to taste)

Method

  1. 1 Soak vermicelli in clean water for 5–7 minutes until soft, then drain.
  2. 2 Heat oil in a wok, fry the garlic and chilli until fragrant.
  3. 3 Add the shrimp and stir-fry until cooked.
  4. 4 Pour in the eggs and stir to spread.
  5. 5 Add vermicelli and cha-om, toss together, season to taste.
  6. 6 Plate up, garnish with sliced red chilli, serve immediately.

Baked Shrimp with Vermicelli

25 minutes 2–3 servings

Shrimp with garlic and peppercorns baked over a bed of vermicelli that soaks up the fragrant juices.

Ingredients

  • Khlong Khlung vermicelli 100 g (soak 5 minutes)
  • Fresh shrimp 300 g
  • 1 thumb-size ginger, julienned
  • Pounded garlic and pepper 2 tbsp
  • Sesame oil / light soy sauce / sugar (to taste)
  • Coriander and spring onion (for garnish)

Method

  1. 1 Soak vermicelli until soft, drain, season with a little soy sauce.
  2. 2 Line the pot with vermicelli and ginger.
  3. 3 Add the shrimp and pounded garlic-pepper.
  4. 4 Add sesame oil and a little water.
  5. 5 Bake on medium heat for 8–10 minutes until the shrimp are cooked.
  6. 6 Garnish with coriander and spring onion, serve hot with seafood dipping sauce.

Spicy Vermicelli Seafood Salad

15 minutes 2 servings

A classic Thai salad — sour, spicy, salty, sweet, all in one.

Ingredients

  • Khlong Khlung vermicelli 100 g (blanched)
  • Blanched shrimp 100 g
  • Blanched squid 100 g
  • Cooked minced pork 50 g
  • Chilli, garlic, lime juice, fish sauce, sugar
  • Tomato, coriander, Chinese celery, shallot

Method

  1. 1 Blanch the vermicelli in boiling water for 20 seconds, drain.
  2. 2 Blanch the seafood and minced pork until cooked.
  3. 3 Pound chilli, garlic and sugar to a fine paste.
  4. 4 Mix the dressing: lime juice, fish sauce, chilli paste.
  5. 5 Toss vermicelli, seafood, pork and vegetables together.
  6. 6 Plate up, garnish with coriander, serve immediately.

Clear Soup with Vermicelli and Minced Pork

20 minutes 3–4 servings

Clear soup, tender minced pork, vermicelli that soaks up the flavour — warm and homely.

Ingredients

  • Khlong Khlung vermicelli 100 g
  • Minced pork 200 g (mixed with 1 egg + pepper)
  • Stock / bone broth 1.5 litres
  • Fried garlic / coriander roots
  • Spring onion-coriander / light soy sauce / fish sauce

Method

  1. 1 Bring the stock to a boil, add coriander roots and fried garlic.
  2. 2 Form the pork into small balls, drop them into the boiling stock.
  3. 3 When the pork floats, add the vermicelli.
  4. 4 Season with soy and fish sauce to taste.
  5. 5 Garnish with spring onion and coriander, serve hot.
